Yesterday, I decided that we were long overdue for healthier cooking.  Since the holiday season, it seems that we have been eating all the wrong foods.  So, it was back to broiled fish and rice for us.  I know, one day won’t make a huge difference, but, hey, it’s a start.  And best of all, these are such simple foods to prepare, and we do enjoy them.  Proof that you don’t have to sacrifice taste for health.
I think the original recipe came from Taste of Home before I altered it to suit myself.

4 – 6 tilapia fillets
1/3 cup water
1/3 cup lime juice
2 tablespoons honey

1 tablespoon peanut oil

1/2 teaspoon dill
Place fillets in a 13-in. x 9-in. baking dish. In a small bowl,
combine the remaining ingredients; set aside 3 tablespoons marinade.Pour remaining marinade over fillets; turn to coat. Cover and refrigerate for at least 1 hour.
Drain and discard marinade. Transfer fillets to a broiler pan coated with cooking spray. Broil for 6 minutes on each side or until fish flakes easily with a fork, basting frequently with reserved marinade.
•2 tablespoons butter
•1/4 cup chopped onion
•1 cup brown rice
•2 1/2 cups seasoned chicken broth
•1 teaspoon salt
•1/4 teaspoon pepper
•dash cinnamon
Melt butter in a large skillet over medium heat. Sauté onion in butter until tender and it begins to turn golden in color. Add rice and sauté, stirring, until onions begin to brown. Add chicken broth and bring to a boil. Stir in salt, pepper, and cinnamon. Transfer to a covered baking dish or leave in the skillet if it is ovenproof. Cover and bake at 350° for 1 hour, until rice is tender.
I just use my ovenproof skillet rather than transfer the rice to a baking dish.
Serve with a salad or steamed vegetables and you have a simple, healthy meal!  : )
