Yep; another squash recipe.  We have squash out the wazoo at this point.  I’m not complaining, mind you.  I know we’ll appreciate it this winter, but right now, we’re picking squash faster than I can freeze it.  On the plus side, this is forcing me to come up with more ways to cook squash.  So, if you like squash, you’re going to love this blog over the next few weeks.  LOL

 

Baked Parmesan Squash

Cooking spray
2 yellow squash (straight or crookneck), chopped
¼ C extra-virgin olive oil
1 Tbsp Lawry’s Seasoned Salt
½ C grated Parmesan cheese
2 Tbsp lemon juice
Pinch of red pepper flakes

Preheat oven to 425 degrees. Spray baking dish with cooking spray. In large bowl, toss squash with olive oil, Seasoned Salt, and Parmesan cheese until well coated. Pour squash mixture into baking dish, with squash evenly arranged. Bake 12 minutes. Remove from oven and sprinkle lemon juice and pepper flakes over squash.
