French-fried Onion & Beef Casserole
3 C dry macaroni
1 Tbsp extra-virgin olive oil
1/2 onion, diced
1/4 C green bell pepper, diced
2 cloves garlic, minced
1 lb. ground beef
2 cups tomatoes, chopped
1 – 8 oz. can tomato sauce
2 fresh leaves basil, chopped
1 tsp dried parsley
1/4 tsp Cajun seasoning
1/8 tsp Kosher salt
1/8 tsp black pepper
1/2 C vegetable stock
1 can Campbell’s Cream of Mushroom with Roasted Garlic Soup
1 C shredded cheddar cheese
1 C French-fried onions
Preheat oven to 350 degrees.
Cook macaroni according to package directions; drain and set aside.
Spray glass casserole dish with cooking spray.
Heat extra-virgin olive oil over medium heat in skillet. Saute onion, garlic, and bell pepper 3 minutes. Add the ground beef to the skillet; brown and drain.
Add the tomatoes and tomato sauce to the skillet. Bring to a boil; lower heat and simmer 10 minutes. Stir in herbs, seasonings, vegetable stock, and soup.
Pour meat mixture into casserole dish. Stir in pasta. Bake at 350 degrees for 30 minutes. Remove from oven; top with cheese and French-fried onions. Bake additional 5 minutes.
