Squash Fritters

vegetable oil

1 summer squash

1/2 onion

1/4 green bell pepper

1 egg, beaten

1 tsp Kosher salt

1 tsp black pepper

3/4 C all-purpose flour

Fill a cast-iron skillet halfway with vegetable oil.  While heating oil on medium heat, place squash, onion, and bell pepper in mini-food processor.  Chop until smooth.  Pour into bowl.  Stir in egg, salt, pepper, and flour.  Drop batter by spoonsful into hot oil.  (I used a melon baller to get the right size.)  Fry 2-3 minutes per side, until golden brown.  Drain on paper towels.
