Thanksgiving favorites: SLOW COOKER CHICKEN AND DRESSING

Ingredients
  • 2 cans of cream of chicken soup
  • 5 c cornbread crumbs
  • 2 c biscuit or bread crumbs
  • 1- 14 oz. can chicken broth
  • 2 eggs, beaten
  • 1 med onion, minced
  • 1 c celery, minced
  • 2 Tbsp butter
  • ½ tsp black pepper
  • 1½ tsp sage
  • 4 boneless skinless chicken breasts, cooked and chopped
  • ½ c water
Instructions
  1. Cook onion and celery in butter until tender.
  2. Pour water and ½ can of soup in slow cooker.
  3. Mix crumbs, one can of soup, broth, eggs, onion, celery, pepper and sage.
  4. Put a layer of chopped chicken in slow cooker and top with a layer of crumb mixture.
  5. Repeat, making 3 layers.
  6. Top mixture with ½ can of soup.
  7. Cover and cook on low for 3 hours.

Slow Cooker Black Beans

This is one of those foods that has as many methods as there are cooks.  This just happens to be mine.  Jorge always said he didn’t like them, and I decided that he had experienced some bland version, so I worked and reworked my version until I arrived at this.  He loved it! So there you are; no more revisions in the black beans category.  : )

Ingredients
  • 2 c black beans
  • 6 c water, divided
  • 1 ham hock
  • 1 Tbsp GOYA® Recaito
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 Tbsp lime juice
  • GOYA® Adobo, to taste
  • 1½ tsp white vinegar
  • 1 chorizo sausage, casing removed and sausage chopped
  • 3 bay leaves
  • ¼ c alcaparrado
  • ¼ c orange juice
Instructions
  1. Soak beans in 2 c water for several hours, or overnight.
  2. Drain and rinse.
  3. Place in slow cooker and cover with 4 c water.
  4. In a skillet ( I used the cast iron skillet I had just used to fry bacon for breakfast), cook ham hock on med heat , turning frequently, until it begins to sizzle.
  5. Remove and place in slow cooker.
  6. Put the Recaito, onion, and garlic into the skillet and cook on low for 3 minutes, stirring frequently.
  7. Pour into slow cooker over beans.
  8. Add remaining ingredients and cook on low 8-9 hours.
  9. Serve with white rice.

Slow Cooker Chicken & Pasta Soup

4 1/2 C chicken stock

1 can (14 1/2 oz.) diced tomatoes, undrained

2 boneless, skinless chicken breasts, cubed

1/2 onion, minced

1/2 C red bell pepper, diced

3/4 C green bell pepper, diced

1 clove garlic, minced

3/4 tsp basil

3/4 tsp oregano

1 Tbsp dried parsley

1/4 tsp Kosher salt

1/4 tsp black pepper

2 C uncooked Gigli or Campanelle pasta

 

Combine chicken stock with tomatoes, chicken, onion, pepper, garlic, and seasonings in slow cooker.  Cook on HIGH for 4 1/2 hours.  Stir in pasta and cook on HIGH for additional 30 minutes.

Slow Cooker Chicken Noodle Soup

 

2 C chicken stock

2 C vegetable stock

4 boneless, skinless chicken breasts, cubed

3 celery stalks, diced

3 carrots, diced

1 tsp dried marjoram

1 bay leaf

1/2 tsp dried thyme

1/4 tsp crushed sage

1/2 tsp Kosher salt

1/4 tsp black pepper

1 packet Goya chicken bouillon

1/2 C frozen mixed vegetables

1 C egg noodles

Pour stock into slow cooker.  Add chicken, seasonings, and vegetables.  Cook on HIGH for 4 hours; add egg noodles and cook one additional hour on HIGH.

Slow Cooker Cheesy Broccoli Potato Soup

 

4 potatoes, scrubbed and diced (unpeeled)

2 C chicken stock

1 carrot, diced

1 celery stalk, diced

1 C onion, minced

1/2  tsp celery seeds

1/2 dried thyme

2 C broccoli florets, chopped

1 C milk

2 Tbsp cornstarch

2 C shredded Cheddar cheese

1/2 tsp Kosher salt

1/8 tsp black pepper

3-4 slices bacon, cooked to crisp

Place potatoes in slow cooker.  Cover with chicken stock, carrot, celery, onion, celery seeds, and thyme.  Cook on LOW for 7 hours.  Add broccoli; cook on HIGH for 30 minutes.  Whisk milk and cornstarch together in small bowl; stir into slow cooker.  Cook 3 minutes on HIGH, stirring occasionally.  Add cheese, salt, and pepper; cook 3 minutes on HIGH, stirring occasionally.

Crumble bacon over bowls of soup.
